According to Ayurvedic health coach Dimple Jangda, heating or cooking honey alters its natural composition, producing a toxic compound called 5-hydroxymethylfurfural (HMF). This compound forms when honey is exposed to high temperatures and can be difficult for the body to digest. Ancient medical traditions also caution that heated honey can act like a slow poison in the body.

Dr. Priyanka Shukla, Head of Dietetics at Ramakrishna Care Hospital in India, confirmed that heating honey above 60°C leads to the formation of HMF, which can have toxic effects if consumed in large quantities. Moreover, heating destroys the enzymes, antioxidants, and nutrients that make honey healthy in the first place.

Experts recommend gently warming honey only up to 40°C if it has crystallized — just enough to make it liquid again without losing its benefits.

Honey naturally contains enzymes, antioxidants, and pollen, which support overall health. However, it should never be given to infants, as it may contain Clostridium botulinum spores, which can cause serious illness. People with pollen allergies or digestive issues should also use honey cautiously.
